On Tuesday the season officially changed from summer to fall, which means those days of easy, delicious grilled dinners will soon be disappearing. Why not pull out the grill this weekend and whip up a simple scallop dinner that incorporates so many flavors, you won’t believe it was so easy to prepare? Take advantage of the fact that you can save $1.31 per pound on our Wild-Caught Virginia Sea Scallops this week. Serve them alongside Ukrop’s Asian Slaw, some brown rice or your favorite local vegetables prepared on the grill.
Joe’s Market Chef Eugene Peay’s Honey-Ginger-Teriyaki Grilled Scallops
Serves: 2 | Prep Time: 40 minutes | Cook Time: 4 minutes
10 jumbo-size sea scallops
1 cup freshly squeezed orange juice
½ bunch chopped fresh cilantro
salt and pepper to taste
3 cloves garlic, chopped
1 bottle Joe’s Market Honey Ginger Teriyaki Grill Sauce
Combine all ingredients and let stand for 30 minutes. Heat grill to medium-hot heat. Grill scallops for about 1 minute per side and allow to rest. Serve with sweet corn bread from Ukrop’s Bakery. (These can also be served as an appetizer. Plan for at least 2 scallops per person.)

Tex-Mex Burgers
Serves: 4
Prep Time: 15 Minutes
Cook Time: 8 minutes
Ingredients:
1 small onion, grated
1 clove garlic, minced
¼ cup Joe’s Market Roasted Garlic & Tomato Salsa
½ tsp. salt
¼ tsp. pepper
¼ cup breadcrumbs
1 pound ground round
4 slices sharp cheddar cheese
1 avocado, sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 red onion, sliced
1 tomato sliced
4 lettuce leaves
4 rolls
Heat grill to medium hot. Mix onion, garlic, salsa, salt, pepper, bread crumbs and beef until just blended. Form into 4 patties. Grill burgers for 4 minutes per side and top with cheese 2 minutes before they are done cooking. Serve on rolls with lettuce, tomato, avocado, peppers, onions and more salsa if desired.

This dish is both packed with flavor and utterly easy to prepare (it only calls for 5 ingredients including a garnish, in fact!). Shrimp, Pesto & Pasta Primavera Salad
Serves: 6 as an entree | Prep Time: 5 minutes | Chill: Overnight
1 Ukrop’s Pasta Primavera Bake
1 5-oz tub reduced-fat feta cheese
Approx. .6 pounds Ukrop's All-Natural Pre-Cooked Shrimp (optional)
3 Tbsps. pesto (we love the refrigerated Cibo Naturals brand, but any prepared pesto will do)
Fresh basil, sliced thin, for garnish (optional)
Pour Pasta Primavera into a large bowl. Stir in feta cheese and shrimp, reserving 2 Tbsps. feta. Pour pesto over top and stir to combine. Cover and chill overnight to allow flavors to combine. Before serving, sprinkle with remaining feta and sliced basil.
