Quinoa (pronounced “keen-wa”) is an extremely nutritious, gluten-free alternative to grain products. This plant-seed is native to South America and is related to spinach and chard. The Quinoa seed looks like a cross between millet and a sesame seed and packs a vitamin-rich punch.

It’s higher in calcium, iron, manganese and magnesium than corn, wheat, barley and rice.  It is also a good source of both soluble and insoluble dietary fiber.  An added bonus: quinoa is low in sodium and contains all 9 essential amino acids, making it a complete protein.

Quinoa is easy to prepare in about 15 minutes (in the microwave or oven), and can be used in many types of dishes. The fluffy seeds have a mild, nutty flavor. Try serving it as an alternative to rice in soups, chili or stir-fries. Use it in place of cous cous in cold salads, pilafs and casseroles. It can also be served by itself, used in pancakes, or even cooked as a hot cereal.
