After Thanksgiving Ukrop’s Restaurant Chef Eric Henkel takes a slightly different take on the traditional leftover turkey sandwich. He makes a monster Panini with gravy for dipping on the side. Try his recipe for a tasty treat after the guests have left.

Leftover Turkey Panini
Serves: 1-2 | Prep Time: 5 Minutes | Cook Time: 8 minutes

Butter
2 slices bread  
About 4 slices leftover turkey
Stuffing
Mashed Potatoes
Cranberry Sauce
Smoked Provolone (optional)
Gravy, reheated

Butter 1 side of each piece of bread. Assemble your sandwich by placing smoked provolone on 1 piece of bread (butter side down). Top with turkey, mashed potatoes and stuffing. Spread non-butter side of other piece of bread with cranberry sauce and close sandwich. Heat a Panini press or pan with a bit more butter in it over medium heat. Once hot, add sandwich. Grill on one side until bread is toasted, 3-4 minutes. Flip and cook until other side of bread is toasted and cheese is melted. Serve with hot gravy on the side for dipping.
