The Salad Bar is a convenient way to eat healthy. Just make sure to limit high-calorie toppers and load up on veggies. Here are a few of our favorite themed salads to make at Ukrop’s Salad Bar. It keeps your meal interesting.
Asian-Style Salad
Top your favorite lettuce with baby corn, shredded carrots, shredded red cabbage, broccoli, edamame and mandarin oranges. Add small amounts of crispy Asian noodles, beef lo mein, or a spring roll on the side to amp up the flavor. Finish it with a drizzle of oil and vinegar.
Mexican Salad
Top a mixture of iceberg and romaine lettuces with multicolored pepper strips, onions, pico de gallo or salsa, black bean and corn salsa, kidney beans and shredded cheese. Finish it with crisp tortilla strips or a tortilla on the side. Skip the dressing. The salsa or pico de gallo will add enough flavor!
Greek Salad
Start with romaine lettuce, then add garbanzo beans, pepperocinis, feta cheese, cucumbers, black olives, grilled chicken, tabbouleh and balsamic vinaigrette. Add hummus and more raw veggies or one or two Greek pinwheels on the side.
Tangy Bean Salad
Combine lettuce, beets, three bean salad, feta cheese, sprouts, cucumbers, sunflower seeds and balsamic vinaigrette for a unique flavor combination.
California Salad
Cover your favorite lettuce with grapes, strawberries, cottage or feta cheese, your favorite nuts, raisins, dried cranberries and balsamic vinaigrette.
